Kaleidoscope Salad with Latte Vino Balsamic Vinaigrette

4 cups baby salad greens
1 cup strawberries sliced
1 granny smith apple sliced
2 carrots sliced
1 cucumber sliced
½ red bell pepper sliced into thin strips
¼ pound White Stilton with Blueberry cheese
½ cup toasted pecans

Place pecans on baking sheet and bake at 350 degrees for about 10 minutes. Check often, pecans can burn very quickly.  Place washed salad greens in bowl. You can use baby romaine, spinach, leaf lettuce or other mild tasting green mix as long as it doesn’t include arugula as it is to strong for this salad.  Add the rest of the fruit and vegetables.  Crumble cheese on top and add pecans.  Spoon on dressing.
 
Latte Vino Balsamic Vinaigrette
½ cup Balsamic Vinegar
½ cup Latte Vino

Mix  and serve.
