Kaleidoscope Salad with Raspberry Pomegranate Balsamic Vinaigrette
(or Ruby Port Balsamic Vinaigrette)
4 cups baby salad greens
1 cup strawberries sliced
1 granny smith apple sliced
2 carrots sliced
1 cucumber sliced
½ red bell pepper sliced into thin strips
¼ pound White Stilton with Blueberry cheese
½ cup toasted pecans
Place pecans on baking sheet and bake at 350 degrees for about 10 minutes. Check often, pecans can burn very quickly. Place washed salad greens in bowl. You can use baby romaine, spinach, leaf lettuce or other mild tasting green mix as long as it doesn’t include arugula as it is to strong for this salad. Add the rest of the fruit and vegetables. Crumble cheese on top and add pecans. Spoon on dressing.
Either of the dressings below are fantastic with this salad.
Raspberry Pomegranate Balsamic Vinaigrette
½ cup Raspberry Balsamic Vinegar*
½ cup Pomegranate Juice
Ruby Port Balsamic Vinaigrette
½ cup Ruby Port wine
½ cup Raspberry Balsamic Vinegar*
Mix and serve.
* You can substitute regular balsamic vinegar for the Raspberry Balsamic if you like.
